With a seven month old son who would nurse 24/7 if I let him, I’ve got to keep my calories up. I’m thankful for my little nursing champ but to maintain enough milk for his ravenous appetite I love recipes like these.
This is an original recipe that i discovered while simply dumping a bunch of things into a bowl and hoping for the best.
Turns out they’re pretty darn good–simple too!
1/2 cup plain whole milk yogurt
1 egg
1/4 cup honey
1/4 cup coconut oil
1/3 cup chopped dates
2 very ripe smashed bananas
1tsp baking soda
1 cup oats
1 cup while wheat flour
2 tbsp ground flax seeds
1tbsp chia gel*
1. Preheat oven to 350
2. Mix wet ingredients together well
3. Add all dry ingredients and mix until just combined
4. Pour into a prepared loaf pan and sprinkle oats on the top
5. Bake for 35-40 minutes
*to make chia gel, simply add 2 tbsp chia seeds to 1/2 cup of water and allow to sit for 10 minutes stirring a couple of times.
