Pumpkin Lactation Muffins

  Happy Halloween! To celebrate the holiday, I whipped up a batch of Pumpkin Lactation Muffins to enjoy,

These muffins come together in a jiffy and are delicious- dense but not heavy, not too sweet. I used maple syrup and, as written, I actually think they’re a bit savory & work great in place of a regular dinner roll or biscuit alongside a plate of turkey or chili. If you prefer a sweeter muffin try using honey or brown sugar, instead. When I tested this recipe I didn’t use muffin liners, I just oiled the pan with coconut oil and they popped right out with no problem.

These muffins freeze well, so you can make a big batch & save some for later. They’re effective, too! I only had one from the first batch & had noticeably more milk. The flavor of  brewer’s yeast isn’t noticeable to me, but some may be more sensitive to it. If that’s the case try decreasing the yeast by half a tablespoon &/or mixing in some yummy extras such as chocolate chips, dry cranberries, pecans, etc.

No one in your home breastfeeding? No problem, just leave out the yeast, no other adjustments are needed.

 

Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup unsweetened applesauce
  • 1/2 cup maple syrup or honey 
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/4 c almond or coconut milk
  • 1/4 cup coconut oil
  • 1 1/2 cup oat flour
  • 1/2 cup rolled oats
  • 2 Tbsp nutritional yeast
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1/2 tsp sea salt
  • 1/2 tsp powdered ginger
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg

Instructions

  1. Preheat oven to 350 degrees Fahrenheit. Prepare a 12-cup muffin tin with liners.
  2. To a large bowl, add the pumpkin, applesauce, syrup/honey, eggs, milk, vanilla and oil. Whisk until combined.
  3. In a smaller bowl mix the flour, oats, baking soda, spices, yeast, and salt. Fold the dry ingredients into the wet. Don’t over-mix, you just need to stir until combined. Batter will look somewhat grainy.                                                                                          *If you’d like to add any mix-ins, like chocolate chips or walnuts, now’s the time to do so.
  4. Spoon the batter evenly into the cups.
  5. Bake the muffins for 20-22 minutes, until tops spring back when gently touched.
  6. Allow muffins to cool in the pan for 10 minutes before transferring them to a wire rack to cool completely, or they might fall apart.
  7. Enjoy!

If your parents ever told you to be wary about getting what you want, well my advice is to take that warning to heart. Believe me, getting what you want, what you’ve pined for and dreamed of, may actually be the very last thing you need. If you need to know more, just read on.

I’m Amy. I live with my Mom and my stepdad in a quiet street in the suburbs of the third largest city in the state. If it sounds dull, that’s because it is. Well, it was. To be strictly fair to my parents, and to my stepdad in particular, I can’t honestly say he counts as ‘dull’ anymore.

Actually, dull it may have been, but my life was pretty good. I had a lot of friends, plenty of freedom, and I was heading for a place at a good college despite the fact that I didn’t try that hard at school. I was kind of lucky like that. Then there’s my high metabolism. I’ve always had it. Everyone said that when I hit the teenage years, I’d have to watch what I ate more.

But they were wrong. Pizzas, burgers, fried chicken, shakes; it didn’t matter. I never put on weight. A lot of that was down to the dancing classes I did, three times a week, and twice at the weekend. But not entirely. My friend Shea went to all the same classes and she could barely look at a burger without putting on a few pounds. Yet I stayed slim, lithe and cute.

A lot of the girls hated me, so they found other things to pick on about my appearance. Unfortunately, there was one easy target. My chest.

Yes, I know, it’s a standard insecurity. It’s almost a fucking cliché. But there it is. I wasn’t completely flat, but compared to some of my friends, well, all of my friends in fact, I was severely under-endowed.

It hadn’t stopped me dating, and I was no longer a virgin, not after that six weeks I was Nate in the summer, but there were times when I would get really self-conscious about it.

And Halloween was definitely one of those times.

I know you’re supposed to love Halloween, but I hated it. For a start, it was all my friends talked about for like a month beforehand. And it wasn’t like I hated partying or anything. It was the costumes. There were SO many options, so many sexy outfits, but all of them, or almost all of them, involved showing off your chest, and in my case that really wasn’t an option.

So, every Halloween I kind of went into a mini depression. Not full on, just kind of low. Some nights I looked at myself in the mirror, turning this way and that, trying to find ways to emphasize my breasts. But it never worked. Some days I thought that the only way people would think I wasn’t a boy was because I was wearing a dress. Well, that and the make-up, and the voice and the hips and the cute face. But you know what I mean. I know that some boys don’t care about boobs, and I get that, but they seem to be kind of rare, and in any case, even when I had one, in Nate, I didn’t believe him.

I confided to a couple of my friends about it one year and every Halloween after that they made a big effort to cheer me up. But last Halloween I was particularly down. Hannah was having a huge party and I made myself miserable looking at all the cute costumes online. I really wanted to go as a busty vampire or a hot maid or cat girl. But all of those costumes were designed to show off your boobs.

Hannah didn’t help by suggesting that I could get a boob job. I mean, I knew I could, I just didn’t want to. My parents would probably pay for it, but then everyone would know it was fake.

So, there I was, a week before Halloween, lying on my bed, browsing costumes on my phone, making myself feel more and more miserable. Bored and restless, I tried looking up breast growth treatments. I’d tried a few, usually creams from China or Thailand, none of which had any effect. Then I came across an advert that caught my attention. Ultimate Power Lactation Oatmeal - you want this!

I was never an oatmeal eater.

In fact, breakfast wasn’t even really my thing – except for croissants… ALL the croissants.

But once I have birth the hunger started early, and came on hard

Mind on My Milk and My Milk on My Mind

Breastfeeding is super difficult for a lot of reasons. But for every reason that it’s so difficult there are five reasons for why it’s so incredible. I’ve been working hard to increase my milk supply so that I can nurse my daughter and then try to pump to build up a supply in the freezer for when I go back to working. My fiance’s cousin introduced me to this amazing invention called a Haakaa. This is a silicone breast pump that suctions to your opposite breast while nursing, to catch the milk that you leak. I use this mostly every time I feed Ivy and I usually catch between half an ounce to one ounce, and I’ve even gotten up to two ounces. I got mine off Amazon for only $12.99, and I’ll put the link to this at the end of my post.

Let me just tell you, WATER IS KEY. I used to think if I drank a good amount of fluid throughout the day I would be good to go. I was wrong. You need to drink A LOT of water through the day. I try to drink an 8 ounce glass of water every time I nurse or pump, and I try to end my day with my big hospital mug full of ice water. When Ivy wakes up during the night to eat, I try to drink some more of that water to keep up.

It’s also super important to take in enough calories. Breastfeeding women should take in at least 1800 calories a day. If you are more active you should take in even more than that. Breastfeeding burns 500 calories a day, so it’s really important that you eat enough. This doesn’t mean you should have ice cream for all your meals, and chips for dessert. Though you need to take in more calories it’s, they should be healthy calories. Eating a diet high in protein, healthy fats and healthy carbohydrates is a good way to get in enough calories while remaining healthy.

I strongly recommend trying Mother’s Milk Tea, if you like hot tea. I make mine with lemon and honey, and I think it tastes really good. Don’t let the initial smell turn you off, I promise it’s tasty! After drinking the tea I noticed that I produced double when pumping, compared to before trying the tea.

Lastly, there are different snacks you can bake with ingredients like brewers yeast, and flax seed that are great at helping to increase production. I found a good recipe for Pumpkin Spice Lactation Muffins; you can find the recipe at the end of this post. The muffins were not super flavorful, but did not taste bad at all. After eating my first muffin I noticed that I became engorged much sooner than I normally had. I have a pinterest board where I’ve saved a bunch of different recipes I will be trying; I will also have that link at the end of this post.

Like I stated at the beginning of this post, breastfeeding is hard. Our littles need us to be there as soon as they are hungry, and we must drop everything for them. While we aren’t nursing or pumping we are trying to make sure that we produce enough milk for them. It’s a lot of work but it’s so incredibly worth it. The bond I have with my children because I nursed them is something I will cherish forever, and the nutrition and antibodies they get from my milk have no comparison.

The Global Breastfeeding Scorecard, which evaluated 194 nations, found that only 40% of children younger than six months are breastfed exclusively (given nothing but breastmilk) and only 23 countries have exclusive breastfeeding rates above 60 percent. 😢

Breastfeeding is treated as a last resort to families.⠀40%??????? This is a public health crisis. As advocates we teach about the benefits of breastfeeding but we need to emphasize the risks of not breastfeeding more.
