Lactation Brownies/Muffins

browniesRecipe:

  • 6 bananas
  • 2/3 cup unsweetened applesauce
  • 2 eggs
  • 1/2 tsp vanilla
  • 1/2 cup coconut sugar OR swerve calorie free sweetener
  • 1 1/2 cups oat flour (blend oats or buy it as flour)
  • 1/3 cup flax meal (can blend flax seeds or buy as meal)
  • 3 heaping tablespoons of brewer’s yeast
  • 1/2 cup cocoa powder (can use dark powder for richer flavor)
  • 1 tbsp baking powder
  • 1 tbsp baking soda

Directions:

  1. Set oven to 350 F. (Mine was ready too early, so you could wait until after the wet ingredients are done if you’re doing a lot of blending).
  2. Mix all wet ingredients plus the sugar with a blender or a mixer. (I used a blender).
  3. Mix all dry ingredients separately. If you’re blending your own oats like I did, feel free to blend all of it together in a blender to make things easier.
  4. Spoon all ingredients together in one big bowl.
  5. IF BROWNIES: Put aluminum foil in cake pan and line with oil (about 1tbsp). Pour batter in, bake for 30 minutes or until a knife or toothpick comes out clean.
  6. IF MUFFINS: Fill 20 cups with batter and bake for 20-25 minutes for smaller brownies./Fill 10 cups with batter and bake for 30 – 35 minutes for larger brownies.
  7. OPTIONAL: Top with 1/2 cup of Halo Top and 1tbsp of G Butter. Or fill with chocolate chips.

W/O Toppings: Cals: 232 Carbs: 45g Sugar: 20g (with coconut sugar) Fiber: 7.5g Fat: 5g Protein: 10g (Potassium: 406mg, Iron: 14%, Vitamin C: 11%)

If you don’t want these for lactation, but for a healthy snack

Use 2 cups oats and no flax meal or brewer’s yeast.
