Recipe | Savory Brunch Oats

Recently I was strongly encouraged to add oatmeal to my diet, for postpartum reasons. However I hate oatmeal. Actually let me say that again. I HATE OATMEAL. The taste, the texture…bleh. I dumped on heavy amounts of maple syrup, brown sugar (and white sugar!), fruit, chocolate, you name it and I probably tried it. I scavenged the internet to find a recipe I could stand to eat, and came across one intended as a lunch, with carrots and celery and the like. That changed everything. It never occurred to me to try anything but sweeteners with oatmeal!

I started experimenting and happily came up with Savory Brunch Oats which taste NOTHING like oatmeal. It’s extremely hardy, takes less than 10 minutes to make, and is packed full of protein, and vitamins. Did I mention it tastes delicious and I can eat it DAILY? Read on fellow oatmeal haters (or lovers)!

Savory Brunch Oats

I recommend making fresh and eating hot as it supports the flavor profile perfectly.

Ingredients

  • 1/2 cup instant oats
  • 1 cup water
  • 1 TSP lemon juice
  • 1/4 TSP Garlic Powder
  • 1 cup raw kale – hand shredded
  • 2 eggs (fried)
  • 1 TSP olive oil
  • 3 Breakfast Turkey Sausages
  • preferred egg seasoning: I enjoy red pepper flakes and lemon pepper, while salt and pepper are a good basic!

Optional toppings: pinch of Flaxseed meal, goat cheese, Parmesan, or whatever savory flavor catches your tastebuds!

Instructions

  1. Warm olive oil in a skillet on the stove on high heat. Toss your turkey sausages in, and coat in the oil. Roll to one side of pan and turn to low-medium heat. Crack two eggs side by side in the pan. Sprinkle your preferred egg seasoning on top.
  2. In the meantime, mix the oatmeal and water together, microwaving for the time required on your package. Flip the sausages in the pan occasionally.
  3. Cook your eggs to your preferred type (over easy/medium/hard or sunny side up). If you flip, be sure to season the other side as well! Keep turning the sausages occasionally for even cooking.
  4. Put lemon juice, garlic, and any additional seasonings in the finished oatmeal (don’t stir). When the eggs are done, place them on top.
  5. Place the kale into the pan, and pour more olive oil on top with the same seasonings you used for the eggs. Turn up the heat to medium, mix the kale and sausage together and continue to move it around the skillet. When the sausage is evenly browned on all sides, and the kale has cooked down, turn off the heat and pour into the oatmeal bowl.
  6. Add any additional toppings such as cheese or flaxseed.
  7. Mush everything together and enjoy!
