Sumbitch Lactation Cookies

SumbitchesThe little man is two weeks old and I’m finally starting to get settled into the mom-life routine. A friend of mine had suggested during my pregnancy that I write a blog on mommyhood so I thought I’d give it a try. What better way to start than by finding/creating the most delicious Lactation Cookie recipe? The challenge is how to make Brewer’s Yeast, Flax Seed Meal and oats delicious. Challenge accepted. I’ve also been watching re-runs of How I Met Your Mother. Enter Sumbitch Lactation Cookies. The perfect combination of lactation boosting goodness combined with Caramel, Chocolate and Peanut Butter. For those unfamiliar of Sumbitch cookies, watch the Season 9 premiere of HIMYM.  And yes, babies heads really do smell like love and unicorn teardrops.
 
Sumbitch Lactation Cookies
2 tablespoons Flax seed meal
4 tablespoons Water
1 cup unsalted Butter
1 cup Sugar
1 cup Brown Sugar
1 cup creamy Peanut butter
2 Eggs
1 teaspoon Vanilla
2 cups Flour
1 teaspoon Baking Soda
1 teaspoon Salt
3 cups Oats
1 cup Chocolate Chips
1/4 cup  Brewer’s Yeast
36 Rolos (chopped)
Preheat Over to 350.
Mix Flaxseed Meal and water and let sit for 3-5 minutes.
Beat butter, sugars, and peanut butter at medium speed until smooth. Add eggs and mix well. Add flax seed mixture and vanilla. Beat until blended. Sift together flour, brewers yeast, baking soda and salt. Stir in dry ingredients gently and then beat until blended. Fold in chocolate chips, oats. Cover and chill for 30 minutes. Using a small cookie scoop, form dough into balls around chopped Rolo pieces and place on greased cookie sheet. Bake 13 minutes until lightly browned. Cool on baking sheets for 5 minutes before transferring to wire racks.
