Before I get to the recipe, can we talk about this awesome Pinterest craft I made?! I can’t take credit for the find. My friend Kristin found it and made one and posted it on Facebook a few months ago. Since then I’ve been wanting to make one and finally got around to it today. I love it! You just write on the glass with a dry erase marker, and erase it when the week is over. So cool!
Ok, now onto the recipe. I honestly had never even heard of Chicken Marbella until, again, I was browsing Pinterest. The husband has been loving green olives lately, so I knew he’d like this. I read through the ingredients and I had many of them, but as usual, changed it up a bit to suit what I had in the pantry (and my wallet… I don’t like having to spend $40 on ingredients for one meal…), so this is my version of the recipe I found. It comes out looking super fancy, but it’s so easy to make. Don’t let the combo of green olives and prunes scare you. It gives the sauce a really great sweet, salty, sour taste that is so good.
Chicken Marbella
1 package of bone-in, skin-on chicken pieces (the package I used contained 2 breasts and 4 legs)
1 cup large green pitted olives
1 cup pitted prunes (use a 1/2 cup if you want, I just happen to like prunes)
1/4 cup capers (add the brine they are in, too)
2 T minced garlic
1/4 cup extra virgin olive oil
1/4 cup apple cider vinegar
1 tsp dried oregano
1 T dried parsley
salt and pepper to taste
1/2 cup white cooking wine
4 T brown sugar
Place chicken pieces in a large container. In a bowl, mix together capers, garlic, olive oil, vinegar, oregano, parsley, and salt and pepper. Add the olive and the prunes, then pour over chicken. Cover, and marinate for at least 2 hours.
Set oven to 350 degrees. Place chicken pieces in a single layer in a 9×13 baking dish. Pour marinade, olives, and prunes over the top. Pour white wine around the chicken, and sprinkle brown sugar on the top of each piece of chicken. Bake in oven for an hour, basting occasionally with the juices.
