This recipe comes from Gimme Some Oven.
Ingredients:
- Linguine noodles
- 1/3 cup of soy sauce
- 1 Clove of garlic
- 1/4 Teaspoon of ground ginger
- 1 Tablespoon of red wine vinegar
- 1/2 Tablespoon of sesame oil
- 1/2 Teaspoon of vegetable/canola oil
- 1/2 Cup of green onions
- 1/4 Cup of almonds
- 1/4 Cucumber
- Cook pasta as usual
- In a mixing bowl, combine everything but the green onions, almonds and cucumbers – whisk until combined
- Cut the cucumber in slices and the green onions in thin slices as well
- When the pasta is ready, drain and stir in the dressing and green onions
- Top your pasta with the almonds and cucumbers
This proportion served both my lunch and dinner meals.
I really liked the taste of the dressing and would probably add more red wine vinegar next time. In the original recipe, it said to boil the noodles in a lot of salt, which causes a major sodium taste overload when combined with the dressing. I usually don’t mind my food to be plain, but I think this recipe needs some chicken or scrambled eggs at least.
