I promised I would share recipes and I am excited to share my first one with you!
This is one of my go-to recipes when I don’t have a lot on hand and I want to fill up my hungry hungry hubby.
Let me start off by saying I only include the “main” ingredients in the 5 or less. I do not count seasonings (salt, pepper, butter, bouillon, etc.)
Today I will show you how to make my Famous Italian Bake.
BONUS – It calls for WINE.
The 5 main ingredients you will need are Italian sausages (5-7), potatoes (I used 6 gold), 2 small onions, a handful carrots, and Moscato wine! Note: you can also use Chardonnay or Riesling or basically any white wine.
First, set oven to 350 degrees.
Then, wash your veggies. Make sure to get all the dirt off your potatoes/carrots/onions. I only had baby carrots on hand, but you can use regular carrots.
Cut your potatoes into 1 inch think slices and then cut into 4’s.
Put your potatoes into a microwave safe bowl and cover them with water. Place in microwave for about 6 minutes. You want them to be tender, but not falling apart.
Meanwhile, cut your onions in half and then slice, about 1/2 inch – 1 inch thick. Set aside.
Slice your carrots next. I used a mandolin for the first time. Be careful. Those things are frigging sharp!
Put your carrots in an ungreased, 9×13 Pyrex dish.
Then cut your Italian sausage into about 2 inch thick slices. Note: The photo of this is missing because Tinselman got bored and I was now balancing him on my hip. #momtogproblems.
Next, you will need 2 pans, one for your sausage and onions and one for your potatoes.
Cook both over medium heat with a tablespoon or so of butter. Once they are almost done, I like to crank the heat up and give the potatoes a little crisp and brown the sausage.
After they are done cooking, transfer both pans to the Pyrex dish with the carrots. Do not drain any of the delicious juices.
Next, mix in 1 cup of chicken stock or chicken bouillon and 1 cup of the white wine and stir.
Finally, pop that bad boy into the oven and bake for about 25 minutes.
Enjoy with some garlic bread and a glass of the left over wine!
