WHAT!?!?! A gourmet cake AND a cake stand? Say it isn’t so!…Ahhhh, but it is. AND, it’s sooo much simpler than you would image.
Now, trust me, I am NO baker. Cooking I can do but baking always seems to be a struggle for me. So, if you’re already turning a cheek to this entry…HOLD TIGHT! I’ll walk you through this and you’ll be happy you stuck around ;)
OK, so first things first. Let’s tackle the CAKE.
What do you need? Well, cake mix. Whatever flavor your little heart desires. I purchased 3 flavors (Vanilla, Chocolate and strawberry). Then your tubs of icing. I bought 4 tubs but I got them STORE BRAND for 99 cents! Look for your coupons and sales or just buy store brand, it’s just as good trust me.
I used a 9″ round cake tin from WILTON for this. I already had this but if you need to purchase it, then it will of course bump your price point up a bit, but not much :)
Now, here comes the part that intimidates all of us NON-BAKING types…Just follow the box. Each measurement is right there and all the work is done for you. Follow your directions to the T and bake it. The bake times will probably vary as mine did but DON’T PANIC. Just grab your toothpick and poke the center of your cake to make sure it’s done. When the cake is finished set aside to cool and repeat the process for the remaining flavors of your cake.
Here is the biggest factor in your cake making: MAKE SURE THE CAKES ARE COMPLETELY COOL before continuing with the next steps. That is the best advice you’ll get all day! lol
I stacked my cakes so, I had to do a little trimming on the top so they’d lay flat. DON’T WORRY. It’s not that difficult. Just grab a long blade serrated knife and hold it parallel to the top of the cake and slowly begin shaving away the top of the cake if it bubbled up during baking. Once it’s pretty flat (it doesn’t have to be perfect), you can layer your first 2 cakes!
Isn’t that easy?? OK now, repeat with your last cake…trim and stack the final layer. If you only want 2 layers then of course omit this step ;)
NOW, you need to secure the layers from slipping when icing so…I just used long lollipop sticks that I purchased at Walmart in the baking aisle. I inserted 3 of them into the cake and trimmed off the excess. SIMPLE!
Now you are ready to add a crumb coating. This is just a special little term for a layer of icing that helps keep the cake crumbs from getting into your final icing layer. I just used a tub of white icing here applying a very thin layer all over the cake layers.
See!? Simple. Just use a large offset spatula and smooth it and thin it out! Easy Peezy!
Once you’ve applied your crumb coating, put it in the fridge to let the icing set up. I left it for about an hour.
After that, it’s up to you how you chose to decorate. I just separated my icing out into 4 bowls and added blue gel coloring in 3 of them to create an OMBRE effect, adding more gel for darker blue and less gel for lighter. I applied each color in layers then took the offset spatula again and smoothed it out again to make a layered look.
And VOILA! A gourmet style cake for WAYYYY less than you’d pay to have it made!
NOW! The cake stand! Again SUPER SIMPLE!
I bought an old 9″ cake tin at the thrift store for a buck and then some crystal rhinestone embellishments from Michaels. I already had the paint but again, you made need to purchase the color of your choice. All I did was spray paint the tin with 2 coats of paint and then embellish it with the rhinestones. I used glittery numbers and glued them onto the tin as well. Use your creativity here! Add lace, flowers, bigger rhinestones…anything you wish! The base of the cake is another thrift store find. It’s just a glass vase I purchased for $0.50!
And that’s it! I had sooo many compliments on this cake when we took it to my daughter’s Birthday Dinner and you will, too!
